The Outpost In Bedford Serves Up Organic, Non-gmo Food Direct From Farmers

The Outpost in Bedford is the only 100 percent organic and non-GMO store in the area, that is farmer owned and farmer supplied. So explained Owner John Ubaldo, owner of John Boys Farm, who opened this little bit of fresh food heaven two years ago.

All meats and eggs sold at this country store come from Ubaldo's 14-year-old farm where he's known for feeding his animals pesticide and herbicide-free grains that he personally grows and grinds. Grass fed cheeses, yogurts and butter comes from friends and neighbors.

The Outpost also offers prepared foods and take-home meals; catering and private-event menus; raw and fermented products; dairy products and fresh breads. There is also a nice gluten-free assortment.

"We can do anything custom you want," said Ubaldo. "We are your kitchen away from home."

That includes making meals for people six days a week and providing all farm fresh ingredients. Ubaldo said that the store has become a place for people to use as a resource and live healthy by. Foods, he stressed, are seasonal.  He credits local chef Marlene Fantano for taking care of every person that walks in that door like they are family.

He tends to do the cooking on weekends doing an all day brunch menu with everything from smoked pork jowl over cheesy grits with caramelized onions and a sunny side up duck egg to huevos rancheros and even his own version of the Croque JB served with bacon and a portabella cream sauce.

Ubaldo, who grew up in Pound Ridge and says his family has been in the area for 50 years, said he remembers the old Stewarts from when it was a butcher shop so when the place became available, he jumped. Losing several friends and relatives in the 9/11 tragedy was an eye-opener that got the then Wall Streeeter deciding on a major lifestyle change. 

What started with "a few ducks, some geese and 25 chickens" and a journey to look at farms in the Hudson Valley led to now owning 185 acres, 100 head of Black Angus cattle, 130 Berkshire pigs, 220 ducks and 1.400 chickens in Cambridge, N.Y.
