BEDFORD, N.Y. – Fans of wholesome food are rerouting their appetites to Bedford, where TRUCK, a new restaurant, is preparing to open.
The culinary vision of chef and owner Nancy Allen Roper, TRUCK puts northern New Mexican fare on the map in New York. Fans of the food might recognize Chef Roper from her popular Greenwich, Conn. restaurant, Boxcar Cantina, known for its authentic dishes as much as for its commitment to creating them with locally sourced, sustainably produced ingredients. And Boxcar’s margaritas are pretty popular, too.
Roper’s new venture promises similar commitments to responsible food service, without sacrificing deliciousness. Drawing on her childhood experiences growing up in New Mexico and eating along the famed Route 66, Roper's work usually encompasses a blend of New Mexican flavor and easy American comfort. With TRUCK, Roper seems to be trying to recreate some of that southwestern authenticity.
The word right now is that TRUCK will open its doors at 391 Old Post Road in Bedford sometime in mid-August. Anyone who has tried Chef Roper's guacamole is just waiting for the green light to truck on over. Look for more details on opening as they are available right here, or on TRUCK's Facebook page.
