Bedford Chef Plans Pop Up Eatery, Preaches 'Community To Table' Movement

LARCHMONT, N.Y. -- Two chefs -- Zachary Stoller of Danbury Conn, and Frankie Ortiz of Wappingers Falls -- are hoping to get fellow foodies as excited as they are about what they call the "community to table" experience.

Their goal? To redefine what farms to table means. To showcase their philosophy, they will be hosting a chef demo at the Larchmont Farmers Market on Saturday, May 14 at 10 a.m. They will also be hosting their first ever pop up restaurant, Heritage Brew and Food at Plates on Monday, May 23 in Larchmont, where Stoller works as a sous chef. (Ortiz is a sous chef at Bedford Golf and Tennis Club in Bedford.)

The name Heritage comes from the idea of hunters and gatherers. "It's our responsibility as chefs to help influence what we eat, and to strongly advocate the importance of supporting sustainable cooking, purchasing and sourcing local product," explained Ortiz. "We're saving the craft that we love and respect for future generations to come with one unforgettable dinning experience at a time." 

The two say their passion for this kind of community movement started when they learned about farm to table cooking in Napa Valley under Chef Larry Forgione. It's a mission they want to take to other towns, cities and even states, to teach folks about the importance of supporting their local communities.

And they are putting their money where their mouth is, so to speak.

All aspects of the dining experience at Heritage will focus on seasonal, local, and sustainable. "Everything from the produce, to the plate you eat off of will come from the local community," stressed Stoller. "We want a dining experience that the community can rally behind."

The partners other goal is to bring beer to the forefront of the culinary industry. "Wine has long been viewed as a high class beverage to pair with food, and beer the complete opposite," he said. "We believe that beer does not get enough credit in the culinary industry, and we want to prove that it can be paired even better than wine."

To that end, guests can expect a $65 five-course tasting menu with beer pairings. Some of vendors include Cabbage Hill Farm, Pound Ridge Organic, Sea to Table, Fable from Farm to Table, Hill Top Hanover, Hemlock Farm, Hudson Beach Glass, and Davi Studio.
